Ingredients: Pasta: - 1 tbsp. Cooking salt - Penne Pasta Sauce: - 1 Onion, diced - 1 capsicum, diced - 2 cloves of garlic - 10 very ripe tomatoes - 1/2 cup red wine - Basil leaves - 1/2 tsp sugar (if required) Garlic Bread: - 1 loaf of Turkish bread, cut longways - Mozzarella - Parsley - Garlic - Olive Oil Method: Sauce: 1. Add the onions, capsicum and garlic to a pan and let it cook until onion is soft. 2. Add the red wine to the pan and let it cook down for a few minutes then add the tomatoes and basil. Stir to combine. 3. Let it simmer with lid on for 2 and a half hours. Taste test half way and add the sugar if required. Pasta: 1. Fill a pot with 3/4 of water and add the cooking salt. 2. Bring to boil and add the pasta. Stir the pasta for 2 minutes (so it doesn't stick to the bottom). 3. When the pasta is aldente, (approx. 20 minutes) drain and stir the sauce into the pasta. Garlic Bread: 1. On each of the slices, add a little drizzle of olive oil, followed by garlic, mozzarella and parsley. 2. Put it under the grill until golden colour.
Serve with grated Parmesan cheese and a slice of garlic bread.
