Ingredients: - 1.5 kg leg of lamb - 1 garlic clove, crushed - ½ bunch fresh rosemary - ½ teaspoon of sweet paprika - 1.5 kg potatoes - 1 lemon zest, finely grated - 2 tbsp Olive Oil Mint Sauce: - 1 bunch fresh mint, chopped - 1 teaspoon sugar - 3 tablespoons wine vinegar Gravy: - 2 tbsp. plain flour - 1 cup liquid stock Method: 1. Preheat BBQ to 200 degrees Celsius 2. Prepare the lamb by placing small indents in the top of the lamb and place rosemary in each indent. Season the lamb with salt and pepper and paprika. Combine the olive oil, garlic and lemon and drizzle half over the lamb. Place the lamb on a rack and put in the pre-heated BBQ, close the lid. 3. Peel and halve the potatoes and parboil in salted water for 10 minutes. Season with salt and pepper and drizzle the remainder olive oil mix over the potatoes and add some rosemary sprigs. Put the potatoes into the hot tray with the lamb. 4. Cook the lamb for 90 minutes or a little less if you like it pink. Once cooked remove from BBQ and let it rest of 15 minutes on a board. 5. Use the same pan to make the gravy. Put pan over high heat and add the flour. Cook, stirring for 3 to 4 minutes or until it bubbles. Slowly add the stock and stir until it thickens. 6. To make the mint sauce add all ingredients into a bowl and mix until combined. 7. Carve and serve with the roast potatoes and side of vegies and top with gravy and mint sauce.
